Recipes

Truffle Infused Mashed Potatoes

Ingredients:

4 large potatoes, peeled and cut into chunks

1/2 cup heavy cream

2-3 tablespoons butter

1-2 ounces fresh Uncinatum Burgundy Black Truffle

Salt and freshly ground black pepper to taste

Chopped chives for garnish

Instructions:

Boil the potato chunks in a large pot of salted water until tender. Drain and return them to the pot.

Mash the potatoes while warm, adding heavy cream and butter until smooth.

Shave thin slices of fresh Uncinatum Burgundy Black Truffle over the mashed potatoes and stir gently to infuse the truffle aroma and flavor.

Season with salt and freshly ground black pepper.

Serve the truffle-infused mashed potatoes, garnished with chopped chives for a burst of color and freshness.

Ingredients:

1 cup Arborio rice

2-3 cups chicken or vegetable broth

Pour in heavy cream, stir until the sauce thickens.

Ingredients:

12 large mushroom caps, cleaned and stems removed

1/4 cup cream cheese

1/4 cup grated Parmesan cheese

1-2 ounces fresh Uncinatum Burgundy Black Truffle

1 clove garlic, minced

Fresh thyme leaves for garnish

Salt and freshly ground black pepper to taste

Instructions:

Preheat the oven to 375°F (190°C).

Combine cream cheese, Parmesan, minced garlic, salt, and pepper.

Stuff each mushroom cap with the cheese mixture.

Shave thin slices of fresh Uncinatum Burgundy Black Truffle and place on top of each stuffed mushroom.

Arrange the stuffed mushrooms on a baking sheet and bake for about 15-20 minutes or until they are golden and bubbling.
